Good evening! Apologies for the later than usual post, though it does allow me to do something new – posting what I’ve eaten today.
Without further ado, let’s get cracking into the food! Hope you enjoy this special edition of WIAW, big thanks to Jenn for hosting.
It was so good to lie in a little later today, I could have stayed in a little longer but knew I wanted to make the most of the free early morning for a run, which I did. I managed four miles and was ready for breakfast when I reached home.
Breakfast: frozen berries and coyo
My favourite breakfast, totally refreshing and decadent. After enjoying this with a coffee, it was time to jump in the car and drive down to the Cotswolds. I had to attend an appointment with an osteopath at 11am, so it was a bit of a race to get down there in time!
The appointment took an hour and involved some painful manipulations. I then drove home and sorted through some paperwork with my Mum at home before we headed into town for lunch.
Lunch: Salade Niçoise
This was absolutely perfect and mixed all the way through so every bite contained tuna, olives and cucumber – quite a feat! I also had a large Americano, which was delicious. After chatting for a while, we went for a wander around town, then picked up Harry-Dog for a quick walk.
I said goodbye to Harry-Dog and Mum and went for a walk with my Dad! Lots of family time today
After our walk, I jumped back in the car and began the hour-long drive back to Bristol. I wasn’t overly hungry but knew I needed to be alert for the journey, so tucked into a snack.
Snack: Pulsin protein bar
I reached home and took myself on another walk to the shops, where I picked up what we needed for dinner and started cooking!
Dinner: salmon, asparagus, beetroot, carrot, avocado, tomato, cucumber, salad, apple cider vinegar
I love all the colours of this plate! Almost every colour of the rainbow – I think I’m just missing blue. I’ve had such a salmon craving recently and this totally satisfied that.
Dessert: raw chocolate, almond butter, dates
Yum, yum yum! Such a good way to finish off such a gorgeous meal! I love everything on this plate a bit too much.
I have plans for something sweet a bit later on tonight, I picked up some lovely baklava today and my Dad bought me a few treats too – so much to choose from!
